ABOUT

For this fantastic collaboration of flavour and talent, where Mexico, Argentina and Australia come together effortlessly on the plate, local fire whisperers & ferment champions Wal Foster and Augustin Gonzalez team up Tropical Fruit World’s head chef Armando Enriquez Icaza to draw on their combined rich heritages for menu inspiration to present this one-of-a-kind open air dining experience and a fire feast of wild game, local seafood & vibrant farm produce in the lush surrounds of Tropical Fruit World. 

Under the big avocado on the lawn, you’ll be greeted on arrival with a fruit based cocktail and canapés before being transported on the tour tractor to a secret outdoor location on the farm, your own personal oasis for the evening with communal tables set up under festoon lights in the blossoming macadamia orchard.  

Watch your dinner being flame-cooked over the fire pit in the live kitchen - wild game, local seafood & vibrant produce served banquet style, with origin stories behind each bite from the three chefs. It’s dinner and a show, a melting pot of creativity and flavour. Your evening ends with one of Wal’s legendary Bush Ice Creamery desserts made from foraged fruits, along with a handcrafted food memento to take home.
