ABOUT

From sugar cane to molasses to rum - we explore & taste the entire process of production from start to finish. The Condong sugar mill, a landmark on our landscape, processes cane for their Sunshine Sugar brand and with a history dating back 150 years of multi-generational farmers, the sugar industry makes a vital contribution to food culture in the Tweed. Starting at the beginning, you’ll hear from one of the cane farmers with stories of being a local cane farming family, the milling process followed by a short video presentation that gives great insights into the entire process of sugar production.

This is a rich, full-circle story of collaboration between the sugar mill and Birds of Isle Bunya Nut rum. Distiller Sally Carter & partner Chanel Melani started their female founded rum distillery in Murwillumbah 3 years ago and source their molasses from the mill for their distilling process. Their origin story is an inspiring one that speaks of Country, using native botanicals in the distilling process, and Sally is proving to be one of Australia’s leading experts in the rum industry. Their product is top shelf and their mission is to shed new light on the beauty of rum, its complex flavour profiles & its food friendly nature.

Sally will lead you through a tutored rum tasting masterclass to better understand and appreciate its fine qualities then the fun starts with an interactive, hands-on workshop making your own rum cocktail. A cleverly crafted ‘Sugar & Spice’ snack, prepared by chef Thofan Boontham (Bar Heather) will be served to pair with your cocktail.
