Magic happens when Italian food friends get together to cook a family style lunch for you. To celebrate Savour The Tweed this year, chef Dan Medcalf of No.35 Kitchen & Bar invites his mates Massimo Scalas from Salumi Australia & Rob Constanza from Nomadic Kitchen into his beachside kitchen to collaborate on a breezy flavour-packed menu inspired by time spent on Mediterranean islands and their love of coastal living, fishing and sharing the provenance of food.
The 3-course seafood-led menu designed by this collaborative crew is inspired by the much-loved flavours of the Mediterranean and local produce, from house made focaccia to hand whipped tarama, sardines with caponata, cured king salmon with bottarga, Sardinian seafood fregola & a refreshing house made lemon sorbet.
