Welcome to Saltwater Country with proud Bundjalung chef Mindy Woods, global winner of Champions for Change at World’s Best 50 Awards 2025 who’s joining forces once again with First Nations ally and acclaimed chef Christine Manfield to tell a rich food story of two cultures respectfully blended. With Mindy’s commitment to reclaiming Aboriginal culture through food and Christine’s championing of Indian flavours, this dinner interprets the familiar in a new way.
Their menu honours our rich First Nations food heritage and the introduced Indian cultural diaspora with the abundance of local native ingredients foraged and sourced in the Tweed. This immersive experience of song, dance and storytelling offers a combined narrative, one of active reconciliation and a delicious deep dive into local cultural and culinary customs, ancient and recent.
We get you started with a Birds of Isle Bunya Nut Rum cocktail, wines from indigenous owned Mt Yengo Winery are poured during dinner and a rum cocktail with dessert completes the evening.
