Feast of the Beast

  • Coolamon Station 245 Palmvale Road Palmvale, New South Wales, 2484 Australia (map)

About

An extraordinary opportunity to visit award-winning farm retreat Coolamon Station in the Tweed Valley hinterland, a hidden oasis surrounded by semitropical rainforest, an idyllic setting for our sunset feast of wild meats and the opportunity to take a pause and reconnect with nature. This dinner promises to embody the very essence of connection, community and culture - it’s a seat at the lavish table set on the veranda of the wool shed you won’t want to miss.

Cooking with a sense of place and purpose, meats for this dinner have been caught by wild game hunter Ryan Smith (owner of Fair Game Wild Meats) and cooked over coals in the fire pit where he teams up with Bundjalung star chef Mindy Woods, to bring a meaningful connection to food sovereignty, wild harvested and locally farmed ingredients that shape the enduring food culture and story of Bundjalung Country.

To enhance the flavours on the plate, innovative mead maker Louis Costa (French born local of the Northern Rivers) is pioneering ancient mead making techniques through a thoroughly modern lens, crafting in small batches, bringing rare varietal honeys and native botanicals to his wine making and brewing practice, making exceptional mead wines with little to no residual sugar, producing an elegant range of dry-style sophisticated premium still, sparkling and vintage wines, full of character.

Expect magic to happen - expect to taste magic - expect to eat meaningfully – expect to sip slower and linger longer – expect to be fully engaged and enthralled.
